  • 6 large eggs
  • 2 tablespoons milk or cream
  • Salt and pepper to taste
  • 1/4 cup chopped ham, cooked sausage, or bacon
  • 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup chopped vegetables (onion, bell pepper, spinach, mushrooms)
  • Cooking spray or butter

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin with cooking spray or butter.
  2. In a bowl, whisk together the eggs, milk/cream, salt, and pepper until well combined.
  3. Divide the chopped ham, cheese, and vegetables evenly among the muffin cups.
  4. Pour the egg mixture over the fillings in each cup, filling each about 3/4 full.
  5. Bake for 15-20 minutes, or until the omelets are set and slightly golden brown.
  6. Let cool for a few minutes before removing from the muffin tin. Serve immediately.
