  • 1 pound pasta (penne, rotini, or farfalle)
  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1/4 cup mixed fresh herbs, chopped (parsley, basil, oregano, thyme)
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, oil-packed, drained
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, preheat grill to medium-high heat.
  3. In a small bowl, combine 1 tablespoon olive oil, half of the chopped herbs, salt, and pepper. Rub mixture all over chicken breasts.
  4. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 5 minutes before slicing.
  5. While chicken rests, heat remaining 1 tablespoon olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds, or until fragrant.
  6. Add sun-dried tomatoes, olives, lemon juice, and cooked pasta to the skillet. Toss to combine.
  7. Add reserved pasta water, a little at a time, until desired consistency is reached.
  8. Stir in Parmesan cheese and remaining herbs. Season with salt and pepper to taste.
  9. Slice grilled chicken and add to the pasta. Toss gently.
  10. Serve immediately, garnished with additional Parmesan cheese and fresh herbs, if desired.

Notes

For extra flavor, add a pinch of red pepper flakes to the pasta sauce. You can also use different types of cheese, such as feta or mozzarella.
