  • 3/4 cup packed brown sugar
  • 1/2 teaspoon baking soda

  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs
  • 1/2 cup lemon juice, freshly squeezed
  • 2 tablespoons lemon zest
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine 1 1/2 cups flour, oats, cold butter, brown sugar, baking soda, and salt. Cut in the butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the oat mixture into the prepared baking pan to form the base.
  4. In a separate bowl, whisk together granulated sugar and 1/4 cup flour.
  5. Add eggs, lemon juice, and lemon zest. Whisk until well combined.
  6. Pour the lemon filling over the oat crust.
  7. Crumble the remaining oat mixture evenly over the lemon filling.
  8. Bake for 30-35 minutes, or until the top is golden brown and the filling is set.
