  • 2 boneless, skinless chicken breasts
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 garlic cloves, minced
  • 1 cup cooked quinoa
  • 1 cup baby spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a bowl, mix lemon juice, lemon zest, olive oil, oregano, thyme, minced garlic, salt, and pepper.
  2. Marinate the chicken breasts in the lemon-herb mixture for at least 20 minutes.
  3. Preheat a grill or skillet over medium heat and cook the chicken for 5-7 minutes per side or until fully cooked.
  4. Let the chicken rest for 5 minutes, then slice it thinly.
  5. Assemble the bowl by layering cooked quinoa, baby spinach, cherry tomatoes, cucumber, and red onion.
  6. Top with sliced lemon-herb chicken and garnish with fresh parsley.
  7. Drizzle with any remaining lemon-herb dressing if desired before serving.

Notes

For extra flavor, add a dollop of tzatziki or a sprinkle of feta cheese to the bowl.
