Lemon Dill Salmon Cakes

These Lemon Dill Salmon Cakes are tender, flavorful, and perfectly seasoned patties that combine fresh salmon with zesty lemon and fragrant dill, ideal for a quick and healthy meal.

  • 1 lb fresh salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 green onions, finely sliced
  • 1 garlic clove, minced
  • 1/4 cup mayonnaise
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

Instructions

  1. Place the salmon fillet in a food processor and pulse until finely chopped but not pureed.
  2. In a large bowl, combine the chopped salmon, breadcrumbs, egg, dill, lemon juice, lemon zest, green onions, garlic, and mayonnaise.
  3. Season the mixture with salt and pepper, then gently mix until combined.
  4. Form the mixture into 6 equal patties and refrigerate for at least 20 minutes to help them set.
  5. Heat olive oil in a skillet over medium heat.
  6. Cook the salmon cakes for about 4-5 minutes on each side or until golden brown and cooked through.
  7. Remove from heat and serve warm, garnished with extra dill and lemon wedges if desired.

Notes

For a lighter option, bake the salmon cakes at 400°F (200°C) for 15-20 minutes, flipping halfway through, instead of frying.
