  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 cup Key lime juice
  • 3 large eggs
  • Key lime slices, for garnish (optional)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth. Beat in flour and vanilla extract.
  4. Stir in Key lime juice, then beat in eggs one at a time. Pour batter over crust.
  5. Bake for 55-65 minutes, or until center is almost set. Let cool completely in pan.
  6. Refrigerate for at least 4 hours, or overnight, before serving.
  7. Garnish with Key lime slices, if desired.

For an extra touch, top with a dollop of whipped cream or a sprinkle of lime zest before serving.
