This Keto Cheesy Crockpot Chicken and Broccoli Casserole is a creamy, low-carb comfort food perfect for busy weeknights, combining tender chicken, fresh broccoli, and melted cheese in a slow-cooked casserole.

  • 2 lbs boneless, skinless chicken breasts
  • 4 cups fresh broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 8 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Place the chicken breasts at the bottom of the crockpot.
  2. In a medium bowl, mix cream cheese, heavy cream, sour cream, minced garlic, onion powder, paprika, salt, and pepper until smooth.
  3. Pour the cream cheese mixture over the chicken evenly.
  4. Cover and cook on low for 4-5 hours or until the chicken is cooked through and tender.
  5. Remove the chicken and shred it with two forks.
  6. Return shredded chicken to the crockpot and add broccoli florets, cheddar cheese, and mozzarella cheese. Stir to combine.
  7. Cover and cook for an additional 30 minutes on low until broccoli is tender and cheese is melted.
  8. Sprinkle Parmesan cheese over the top before serving.

Notes

For extra flavor, sprinkle cooked bacon bits on top before serving or add a pinch of red pepper flakes for a slight kick.
