  • 2 tablespoons olive oil
  • 1 large jalapeno, thinly sliced (remove seeds for less heat, if preferred)
  • 1 cup sliced fresh or canned peaches (drained if canned)
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (if using cornstarch)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped, for garnish (optional)

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, lime juice, minced garlic, and grated ginger. If using, whisk cornstarch with water in a small separate bowl until smooth, then add to the sauce mixture. Set aside.
  2. Season chicken pieces with salt and pepper. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add chicken to the hot skillet and cook for 5-7 minutes, stirring occasionally, until browned on all sides and mostly cooked through.
  4. Pour the sauce mixture over the chicken. Bring to a gentle simmer, stirring frequently, and cook for 2-3 minutes, or until the sauce thickens to your desired consistency.
  5. Gently stir in the sliced peaches and jalapeno. Cook for another 2-3 minutes, just until peaches are warmed through and jalapenos are slightly softened but still vibrant.
  6. Taste and adjust seasoning if needed. Garnish with fresh cilantro, if desired, and serve hot.
