  • 2 Honeycrisp apples, cored and diced
  • 4 ounces feta cheese, crumbled
  • 1/4 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mixed greens, diced apples, feta cheese, walnuts, and dried cranberries.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.

Notes

For a vegetarian option, omit the feta cheese. You can also add grilled chicken or shrimp for a heartier meal.
