Honey Garlic Butter Roasted Carrots

Sweet and savory honey garlic butter roasted carrots make a perfect side dish, combining tender roasted carrots with a flavorful glaze that’s quick and easy to prepare.

  • 1 lb carrots, peeled and cut into sticks
  • 3 tbsp unsalted butter, melted
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together melted butter, honey, minced garlic, salt, and black pepper.
  3. Add the carrot sticks to the bowl and toss to coat them evenly with the honey garlic butter mixture.
  4. Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  5. Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the carrots are tender and caramelized.
  6. Remove from the oven and sprinkle with fresh parsley before serving, if desired.

Notes

For an extra touch, sprinkle with a pinch of red pepper flakes before roasting for a mild kick.
