Easy Honey Butter Cornbread Poppers

These Honey Butter Cornbread Poppers are such a fun, delicious appetizer or side dish! They’re easy to make and perfect for any occasion.

Ingredients

  • 1 box (8.5 oz) Jiffy corn muffin mix
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup butter, melted
  • 2 tablespoons honey
  • Pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine corn muffin mix, milk, egg, and vegetable oil. Stir until just combined.
  3. Stir in cheddar cheese and green onions.
  4. Fill a mini muffin tin with the batter, about 3/4 full.
  5. Bake for 12-15 minutes, or until golden brown.
  6. While the cornbread poppers are baking, whisk together melted butter, honey, and salt in a small bowl.
  7. Once the cornbread poppers are done, brush them with the honey butter mixture.
  8. Serve warm.

Notes

For extra flavor, add a pinch of cayenne pepper to the honey butter mixture. You can also use different types of cheese, such as Monterey Jack or pepper jack.
