  • 1/4 teaspoon black pepper
  • 1 cup quinoa, cooked according to package directions
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce, store-bought or homemade
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a bowl, combine chicken, 2 tablespoons olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
