This Ground Beef Brussels Sprouts Stir Fry is a quick and easy weeknight meal packed with flavor and nutrients. Tender Brussels sprouts and savory ground beef are tossed in a delicious sauce for a satisfying and healthy dish.

  • 1 pound ground beef
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Sesame seeds, for garnish
  • Cooked rice, for serving (optional)

Instructions

  1. In a large skillet or wok, brown the ground beef over medium-high heat. Drain any excess grease.
  2. Add the chopped onion and cook until softened, about 3-5 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Add the halved Brussels sprouts to the skillet. Stir-fry for 5-7 minutes, or until the Brussels sprouts are tender-crisp.
  4. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or maple syrup), ground ginger, and red pepper flakes (if using).
  5. Pour the sauce over the ground beef and Brussels sprouts. Stir well to coat everything evenly.
  6. Cook for another 2-3 minutes, or until the sauce has thickened slightly.
  7. Season with salt and pepper to taste.
  8. Garnish with sesame seeds. Serve hot, over cooked rice if desired.

Notes

For extra flavor, try adding a splash of oyster sauce to the stir-fry sauce. You can also add other vegetables like carrots or bell peppers.
