Ginger Scallion Chicken Noodle Soup

This comforting Ginger Scallion Chicken Noodle Soup blends fragrant ginger and fresh scallions with tender chicken and noodles for a hearty, flavorful meal perfect for any day.

Ingredients

  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, sliced
  • 3 scallions, sliced (white and green parts separated)
  • 6 cups chicken broth
  • 2 boneless, skinless chicken breasts
  • 200g egg noodles
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • Salt and pepper, to taste
  • Fresh cilantro or more scallions for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add the garlic, ginger slices, and the white parts of scallions. Sauté until fragrant, about 2 minutes.
  2. Add the chicken broth and bring to a boil.
  3. Lower the heat to a simmer. Add chicken breasts and cook until fully cooked through, about 15 minutes. Remove chicken and shred it with two forks.
  4. While the chicken cooks, in a separate pot, cook the egg noodles according to package instructions. Drain and set aside.
  5. Return shredded chicken to the broth. Stir in soy sauce, rice vinegar, and season with salt and pepper.
  6. Add the cooked noodles to the soup or serve them in bowls first then ladle soup over them, as preferred.
  7. Garnish with the green parts of scallions and fresh cilantro before serving.

Notes

For extra heat, add a dash of chili oil or fresh sliced chili peppers when serving.
