Ingredients

Scale
  • 4 large sweet potatoes, peeled and thinly sliced
  • 3 cloves garlic, minced
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground nutmeg
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Butter a 9×13 inch baking dish.
  2. In a medium saucepan, melt the butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Whisk in the flour and cook for 2 minutes to form a roux.
  4. Gradually whisk in the milk and cream, stirring constantly until the mixture thickens, about 5 minutes.
  5. Remove the sauce from heat and stir in Parmesan cheese, salt, pepper, thyme, and nutmeg.
  6. Arrange half of the sweet potato slices in the baking dish, slightly overlapping.
  7. Pour half of the sauce over the potatoes, then sprinkle with half of the cheddar cheese.
  8. Add the remaining sweet potato slices in a second layer, pour the rest of the sauce on top, and sprinkle with remaining cheddar.
  9. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20 minutes until the top is golden and the potatoes are tender.
  10. Let stand for 10 minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, add a pinch of smoked paprika or a sprinkle of crispy bacon bits before baking.
