Garlic-Infused Smashed Carrots with Maple Glaze

Delight in tender smashed carrots infused with garlic and finished with a sweet maple glaze, creating a perfect balance of savory and natural sweetness in every bite.

Ingredients

  • 1 lb carrots, peeled
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp fresh parsley, chopped (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil the peeled carrots in salted water for 15-20 minutes until tender.
  3. Drain and let carrots cool slightly.
  4. Place carrots on a baking sheet and gently smash each carrot with the back of a fork or a potato masher.
  5. In a small bowl, mix olive oil and minced garlic.
  6. Brush the garlic-infused olive oil evenly over the smashed carrots.
  7. Drizzle pure maple syrup over the carrots.
  8. Season with salt and freshly ground black pepper.
  9. Roast in the oven for 15 minutes until edges start to crisp and glaze caramelizes.
  10. Remove from oven and garnish with fresh parsley if desired. Serve warm.

Notes

For an extra kick, add a sprinkle of chili flakes before roasting, or serve alongside roasted chicken for a wholesome meal.
