  • 1/2 cup heavy cream
  • 1 cup shredded cheddar cheese

  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: In a bowl, combine salt, pepper, and thyme. Rub evenly over the chicken breasts.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until cooked through. Remove chicken from skillet and set aside.

  6. Cook the Pasta: Cook rotini pasta according to package directions. Drain and set aside.
  7. In the same pot, melt butter over medium heat. Add garlic and cook for 1 minute, until fragrant.
  8. Stir in Cajun seasoning and heavy cream. Bring to a simmer.
  9. Add cheddar cheese and mozzarella cheese. Stir until melted and smooth.
  10. Add cooked pasta to the cheese sauce and toss to coat. Season with salt and pepper to taste.
  11. Serve: Place a serving of cheesy Cajun rotini on a plate. Top with a garlic butter chicken breast. Garnish with extra parsley, if desired.

Notes

Serve with a side salad or steamed vegetables for a complete meal. For extra flavor, add a pinch of red pepper flakes to the Cajun pasta sauce.
