Fudgy Brownie Cookies

These fudgy brownie cookies offer the rich, gooey texture of brownies in a convenient cookie form, perfect for satisfying chocolate cravings anytime.

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together melted butter and sugar until smooth.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, sift together cocoa powder, baking powder, salt, and flour.
  5. Gradually fold the dry ingredients into the wet ingredients until combined.
  6. Stir in chocolate chips.
  7. Drop tablespoon-sized scoops of dough onto prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 8-10 minutes until edges are set but centers are still soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra indulgent treat, sprinkle a pinch of flaky sea salt on top before baking or serve with a scoop of vanilla ice cream.
