Heartwarming French Garlic Soup

This French Garlic Soup, or Soupe à l’ail, is a comforting and flavorful soup made with simple ingredients. It’s a surprisingly delicious way to enjoy the health benefits of garlic.

  • 8 cloves garlic, thinly sliced
  • 4 tablespoons olive oil
  • 6 cups chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • 4 slices baguette, toasted
  • 1/2 cup grated Gruyère cheese (optional)
  • 2 large eggs (optional)
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced garlic and cook, stirring frequently, until softened and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  2. Pour in the chicken or vegetable broth, add the bay leaf and thyme. Bring to a simmer.
  3. Season with salt and pepper to taste. Reduce heat to low, cover, and simmer for 15-20 minutes to allow the flavors to meld.
  4. Optional: If desired, gently crack the eggs into the simmering soup during the last 5 minutes of cooking. Poach to desired doneness.
  5. Remove the bay leaf.
  6. Ladle the soup into bowls. Place a toasted baguette slice on top of each bowl.
  7. Optional: Sprinkle with grated Gruyère cheese.
  8. Garnish with chopped fresh parsley and serve immediately.

Notes

For a richer flavor, add a splash of dry sherry or white wine to the soup while simmering. You can also add a swirl of crème fraîche before serving.
