  • 1 cup warm milk (105-115°F)
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup mashed potatoes (cooked and cooled)
  • 3 1/2 – 4 cups all-purpose flour, plus more for dusting

Instructions

  1. In a large bowl, combine warm milk, yeast, and sugar. Let stand for 5 minutes until foamy.
  2. Add salt, melted butter, egg, and mashed potatoes to the yeast mixture. Mix well.
  3. Gradually add flour, starting with 3 1/2 cups, until a soft, slightly sticky dough forms.
  4. Turn dough out onto a lightly floured surface and knead for 5-7 minutes, adding more flour as needed, until smooth and elastic.
  5. Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a round roll.
  7. Place rolls on a greased baking sheet, leaving some space between each roll.
  8. Cover and let rise for another 30-45 minutes, or until puffy.
  9. Preheat oven to 375°F (190°C).
  10. Bake for 15-20 minutes, or until golden brown.
  11. Let cool slightly before serving.

Notes

Brush the tops of the warm rolls with melted butter for extra flavor and shine.
