  • 4 large eggs
  • 1 cup almond flour
  • 2 tablespoons psyllium husk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil or melted butter

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, beat the eggs until frothy.
  3. Add the cottage cheese and olive oil (or melted butter) to the eggs and mix until smooth.
  4. In a separate bowl, combine almond flour, psyllium husk powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until a smooth batter forms.
  6. Pour the batter into the prepared loaf pan and smooth the top evenly.
  7. Bake for 40-45 minutes or until the bread is golden brown and a toothpick inserted in the center comes out clean.
