Delicious Easy Plum Crumble Bars on a Wooden Cutting Board

These plum crumble bars are easy to make and perfect for a quick dessert or snack! This recipe includes 3 different variations.

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 pound ripe plums, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, whisk together flour, oats, brown sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture into the prepared pan to form the base.
  4. In a separate bowl, combine sliced plums, granulated sugar, lemon juice, and cinnamon. Toss to coat.
  5. Spread the plum mixture evenly over the crumb base.
  6. Sprinkle the remaining crumb mixture over the plum filling.
  7. Bake for 30-35 minutes, or until the top is golden brown and the plum filling is bubbly.
  8. Let cool completely in the pan before lifting out using the parchment paper overhang. Cut into bars and serve.

Notes

For variation, add a handful of chopped nuts to the crumble topping. You can also use other fruits like apples or peaches.
