  • 2 lbs ripe tomatoes (such as cherry, Roma, or beefsteak), sliced or halved
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar (or balsamic, white wine vinegar)
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional, for a touch of heat)

Instructions

  1. Wash and prepare the tomatoes. If using larger tomatoes, slice them into 1/4 to 1/2-inch thick rounds or wedges. If using cherry or grape tomatoes, simply halve them.
  2. In a medium-sized bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, pepper, and red pepper flakes (if using) until well combined.
  3. Add the prepared tomatoes, fresh basil, and fresh parsley (if using) to the bowl with the dressing. Gently toss until all the tomatoes are evenly coated.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the tomatoes to marinate. For best results, marinate for 1-2 hours.
  5. Stir gently before serving. These marinated tomatoes are delicious chilled or at room temperature.
