  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 3 large eggs
  • 1 1/2 cups granulated sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups shredded zucchini
  • 1 cup chopped walnuts, optional

Instructions

  1. Preheat oven to 325°F (165°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat eggs, sugar, oil, and vanilla until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the zucchini and walnuts (if using).
  6. Pour batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra moist bread, don’t squeeze the zucchini dry. Store in an airtight container at room temperature for up to 3 days.
