  • 1 whole chicken, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup mole paste
  • 2 cups chicken broth
  • 1 ounce Mexican chocolate, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken pieces and brown on all sides.
  3. Remove chicken from pot and set aside.
  4. Add onion and garlic to the pot and cook until softened.
  5. Stir in mole paste and cook for 1 minute.
  6. Add chicken broth and Mexican chocolate. Bring to a simmer.
  7. Return chicken to the pot.
  8. Cover and simmer for 30-40 minutes, or until chicken is cooked through.
  9. Season with salt and pepper to taste.
