  • 1 cup all-purpose flour
  • 1/2 cup rolled oats (old-fashioned, not instant)
  • 1/2 cup packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cut into cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch or 9×9 inch baking dish.
  2. In a large bowl, combine the drained peaches, granulated sugar, cornstarch (or flour), and 1/2 teaspoon ground cinnamon. Toss gently to coat the peaches. Pour the peach mixture into the prepared baking dish and spread evenly.
  3. In a separate medium bowl, combine the 1 cup all-purpose flour, rolled oats, brown sugar, 1/2 teaspoon ground cinnamon, and salt. Whisk to combine.
  4. Add the cold, cubed butter to the dry topping mixture. Use a pastry blender, your fingers, or a fork to cut the butter into the mixture until it resembles coarse crumbs.
  5. Evenly sprinkle the crisp topping over the peach mixture in the baking dish.
  6. Bake for 30-40 minutes, or until the topping is golden brown and the peach filling is bubbly.
  7. Remove from the oven and let cool for at least 10-15 minutes before serving to allow the filling to set slightly.
