  • 2 lbs boneless, skinless chicken breasts
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 (10 oz) can diced tomatoes and green chilies, undrained
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the bottom of a slow cooker.
  2. In a bowl, combine cream of chicken soup, diced tomatoes and green chilies, Parmesan cheese, basil, garlic, oregano, and red pepper flakes (if using). Season with salt and pepper to taste.
  3. Pour the sauce over the chicken breasts.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  5. Shred the chicken with two forks and stir it back into the sauce.
  6. Serve over pasta, rice, or mashed potatoes.

Notes

For a creamier sauce, stir in 1/4 cup of heavy cream or sour cream during the last 30 minutes of cooking. You can also add vegetables like mushrooms, bell peppers, or spinach to the slow cooker along with the chicken.
