Crock Pot Lasagna Soup

This Crock Pot Lasagna Soup has all the flavors of lasagna without all the work! It’s an easy and delicious dinner that the whole family will love.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup uncooked lasagna noodles, broken into pieces
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, brown ground beef over medium heat. Drain off any excess grease.
  2. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  3. Transfer the ground beef mixture to a crock pot.
  4. Stir in crushed tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  6. During the last 30 minutes of cooking time, stir in the lasagna noodles.
  7. Serve the soup topped with ricotta cheese, Parmesan cheese, and fresh parsley.

Notes

For a spicier soup, add a pinch of red pepper flakes. You can also add other vegetables, such as zucchini or mushrooms.
