Instructions

  1. Grate the zucchini and place it in a colander. Sprinkle with 1/2 teaspoon salt and let it sit for 10-15 minutes to draw out excess moisture.
  2. Firmly squeeze the grated zucchini to remove as much liquid as possible. Use a clean kitchen towel or paper towels for this step. This is crucial for crispy fritters.
  3. In a medium bowl, combine the squeezed zucchini, flour, beaten egg, parsley, minced garlic (if using), and black pepper. Mix well until just combined.
  4. Heat about 1/4 inch of oil in a large non-stick skillet over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil, flattening them slightly with the back of a spoon to form disc shapes (about 2-3 inches in diameter). Do not overcrowd the pan.
  6. Cook for 3-5 minutes per side, or until golden brown and crispy.
  7. Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
  8. Serve immediately with a dollop of sour cream or Greek yogurt, if desired.
