  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in crushed tomatoes, vegetable broth, basil, oregano, and red pepper flakes (if using). Bring to a simmer.
  3. Reduce heat and simmer for 15 minutes, allowing the flavors to meld.
  4. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  5. Return the soup to the pot. Stir in heavy cream and heat through. Do not boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh basil leaves.
