Creamy Spinach Tomato Tortellini

  • 1 (20 ounce) package refrigerated cheese tortellini
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package directions. Drain and set aside.
  2. While the tortellini is cooking, heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
  3. Add the spinach and diced tomatoes to the skillet. Cook for 5 minutes, or until the spinach is heated through.
  4. Stir in the heavy cream and Parmesan cheese. Bring to a simmer and cook for 2 minutes, or until the sauce has thickened slightly.
  5. Add the cooked tortellini to the skillet and toss to coat. Season with salt and pepper to taste.
  6. Serve immediately.

Notes

For extra flavor, add cooked chicken or sausage to the sauce.
