Creamy Roast Garlic and Lemon Pasta Sauce

This creamy roast garlic and lemon pasta sauce combines rich roasted garlic and fresh lemon zest to create a bright, velvety sauce perfect for elevating any pasta dish.

  • 1 head of garlic
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 lemon, zested and juiced
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)
  • 12 ounces pasta of your choice

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head to expose the cloves, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Cook pasta according to package instructions until al dente, then drain and set aside.
  3. Once garlic is cool enough, squeeze the soft roasted cloves into a blender or bowl.
  4. Add heavy cream, lemon zest, lemon juice, and Parmesan cheese to the roasted garlic and blend or whisk until smooth.
  5. Season the sauce with salt and pepper to taste.
  6. Toss the sauce with the cooked pasta until well coated.
  7. Serve immediately, garnished with chopped fresh parsley if desired.

Notes

For a lighter sauce, substitute half of the heavy cream with Greek yogurt. Adding a pinch of red pepper flakes gives a subtle spicy kick.
