This Creamy Pepper Jack Pasta is a quick and easy weeknight meal, perfect for cheese lovers! The spicy pepper jack cheese melts into a luscious sauce that coats every strand of pasta for a comforting and flavorful dish.

  • 8 ounces pasta (penne, rotini, or your favorite shape)
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 8 ounces pepper jack cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Chopped green onions or parsley for garnish

Instructions

  1. Cook the pasta according to package directions. Drain and set aside.
  2. While the pasta is cooking, melt the butter in a large saucepan over medium heat. Add the garlic and cook for 1 minute, or until fragrant.
  3. Whisk in the flour and cook for 1 minute more, creating a roux.
  4. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in the pepper jack cheese and Parmesan cheese until melted and smooth.
  6. Season with salt and pepper.
  7. Add the cooked pasta to the sauce and toss to coat.
  8. Serve immediately, garnished with chopped green onions or parsley, if desired.

Notes

For an extra kick, add a pinch of red pepper flakes to the sauce! You can also add cooked chicken or vegetables for a more complete meal.
