Creamy Lemon Garlic Chicken with Rice

This Creamy Lemon Garlic Chicken with Rice is a comforting and flavorful dish that’s perfect for a weeknight meal. Tender chicken breasts are cooked in a luscious lemon garlic sauce and served over fluffy rice.

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp chopped fresh parsley
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Reduce heat to medium. Add garlic to the skillet and cook for 1 minute, until fragrant.
  4. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  5. Stir in heavy cream, lemon juice, lemon zest, parsley, and thyme. Bring to a simmer and cook for 2-3 minutes, until sauce has thickened slightly.
  6. Return chicken to the skillet and coat with the sauce.
  7. Serve immediately over cooked rice.

Notes

For an extra touch of flavor, add a pinch of red pepper flakes to the sauce. You can also substitute the chicken broth with white wine for a richer taste.
