  • 1 pound bowtie pasta
  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup lemon juice, freshly squeezed
  • 2 tablespoons lemon zest
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Cook the bowtie pasta according to package directions. Drain and set aside.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Season with salt and pepper.
  3. Add the minced garlic to the skillet and cook for 1 minute more, until fragrant.
  4. Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the pan.
  5. Stir in the heavy cream, Parmesan cheese, lemon juice, and lemon zest. Bring to a gentle simmer and cook for 2-3 minutes, until the sauce has thickened slightly.
  6. Add the cooked pasta to the skillet and toss to coat.
  7. Stir in the fresh parsley. Season with salt and pepper to taste.
  8. Serve immediately.

Notes

Garnish with extra Parmesan cheese and a sprinkle of parsley for a beautiful presentation. You can also add some cooked vegetables, such as broccoli or spinach, for extra nutrients.
