Coconut Cream Pancakes

These Coconut Cream Pancakes are fluffy, delicious, and infused with the rich flavor of coconut. They’re the perfect way to start your day with a tropical twist!

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 ½ cups coconut milk
  • 2 large eggs
  • 2 tablespoons melted coconut oil, plus more for greasing
  • 1 teaspoon vanilla extract
  • Optional: Shredded coconut, whipped cream, fresh fruit for topping

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, whisk together the coconut milk, eggs, melted coconut oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix. A few lumps are okay.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour ¼ cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  7. Serve immediately with your favorite toppings.

Notes

For extra coconut flavor, toast some shredded coconut and sprinkle it on top. A dollop of whipped cream and some fresh berries also make a delicious addition!
