cinnamon swirl banana bread

This cinnamon swirl banana bread is a moist, flavorful treat featuring ripe bananas and a sweet cinnamon sugar swirl, perfect for breakfast or snack time.

  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ¼ cup sour cream
  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a separate large bowl, cream together butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  5. Mix in mashed bananas and sour cream until combined.
  6. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  7. In a small bowl, mix brown sugar and cinnamon to create the swirl mixture.
  8. Pour half the batter into the loaf pan, sprinkle half of the cinnamon sugar swirl evenly over it.
  9. Pour the remaining batter on top and add the remaining cinnamon sugar swirl.
  10. Using a knife or skewer, gently swirl the cinnamon sugar through the batter.
  11. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, try adding a handful of chopped walnuts or pecans to the batter before baking.
