These Churro Cheesecake Donut Cookies combine the best of all worlds! A soft, donut-like cookie is filled with creamy cheesecake and coated in cinnamon sugar for an irresistible treat.

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • For the Cheesecake Filling:
  • 4 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla extract
  • For the Churro Coating:
  • ½ cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons butter, melted

Instructions

  1. Make the Cookies: Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, baking powder, and salt.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla extract.
  3. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  4. Drop rounded tablespoons of dough onto ungreased baking sheets. Use a small spoon to make a slight indentation in the center of each cookie.
  5. Make the Cheesecake Filling: In a small bowl, beat together cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  6. Spoon the cheesecake filling into the center of each cookie.
  7. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  8. Make the Churro Coating: In a shallow dish, combine granulated sugar and cinnamon. Brush the tops of the warm cookies with melted butter and then dip them into the cinnamon-sugar mixture.
  9. Let cool slightly on baking sheets before transferring to a wire rack to cool completely.
  10. Serve and enjoy!

Notes

For extra flavor, add a pinch of nutmeg to the cinnamon-sugar mixture.
