Chocolate Mint Brownies

Delight in rich, fudgy chocolate brownies infused with refreshing mint flavor, perfect for a decadent dessert or snack.

  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon peppermint extract
  • 1/2 cup semi-sweet chocolate chips
  • Optional: green food coloring

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8-inch square baking pan.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in sugar, eggs, and vanilla extract.
  3. Beat in cocoa powder, flour, salt, and baking powder until well blended.
  4. Stir in peppermint extract and chocolate chips. Add a few drops of green food coloring if desired for a minty look.
  5. Pour batter into the prepared pan and spread evenly.
  6. Bake for 20-25 minutes or until the brownie edges start to pull away from the sides of the pan and a toothpick inserted into the center comes out with moist crumbs.
  7. Allow to cool in pan on wire rack before cutting into squares and serving.

Notes

For an extra minty kick, top with crushed peppermint candies or a drizzle of mint glaze before serving.
