Homemade Chicken Shawarma with Creamy Garlic Sauce

  • 2 lbs boneless, skinless chicken thighs, cut into thin strips
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp paprika
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Pita bread, for serving
  • Toppings: hummus, tahini sauce, pickles, tomatoes, onions

Instructions

  1. In a large bowl, combine the chicken strips, olive oil, lemon juice, garlic, paprika, cumin, turmeric, cayenne pepper, salt, and pepper. Marinate for at least 30 minutes, or preferably overnight.
  2. Heat a large skillet or grill pan over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 8-10 minutes.
  3. Warm the pita bread.
  4. Assemble the shawarma by spreading hummus and tahini sauce on the pita bread. Add the cooked chicken, pickles, tomatoes, and onions.
  5. Wrap and serve immediately.

Notes

For an extra layer of flavor, try grilling the chicken instead of pan-frying. Also, feel free to adjust the spice level to your liking.
