Chicken Ginger Rice

A flavorful and comforting one-pot dish featuring tender chicken and aromatic ginger perfectly cooked with fluffy rice for a quick and delicious meal.

  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 1 small onion, finely chopped
  • 2 green onions, sliced
  • Salt and pepper, to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear; drain well.
  2. Heat vegetable oil in a large skillet or pot over medium heat.
  3. Add the chopped onion, minced garlic, and ginger; sauté until fragrant and translucent, about 2-3 minutes.
  4. Add the chicken pieces, season with salt and pepper, and cook until lightly browned on all sides.
  5. Stir in soy sauce and cook for another minute to coat the chicken.
  6. Add the rinsed rice to the skillet and stir to combine with the chicken and aromatics.
  7. Pour in the chicken broth, bring to a boil, then reduce heat to low and cover.
  8. Simmer gently for 15–20 minutes, or until the rice is tender and liquid is absorbed.
  9. Remove from heat and let it rest covered for 5 minutes.
  10. Fluff the rice with a fork, garnish with sliced green onions and sesame seeds if desired, and serve hot.

Notes

For extra flavor, try adding a splash of toasted sesame oil just before serving or mix in steamed vegetables like peas or carrots.
