Chicken Fajita Rice

Chicken Fajita Rice is a flavorful and easy-to-make dish combining tender fajita-spiced chicken, sautéed peppers and onions, served over fluffy rice for a delicious Mexican-inspired meal.

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper, to taste
  • 2 cups cooked white rice
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breasts and season with chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Cook until chicken is browned and cooked through, about 6-8 minutes.
  3. Remove chicken from skillet and set aside.
  4. In the same skillet, add sliced bell peppers, onion, and minced garlic. Sauté until vegetables are tender but still crisp, about 4-5 minutes.
  5. Return the chicken to the skillet and stir to combine all ingredients; cook for another 2 minutes to blend flavors.
  6. Serve the chicken and vegetable mixture over cooked white rice.
  7. Garnish with chopped fresh cilantro and lime wedges on the side.

Notes

For extra flavor, add a dollop of sour cream or guacamole on top before serving. You can also swap white rice for brown rice or cauliflower rice for a healthier twist.
