Chicken Carbonara

Chicken Carbonara is a creamy Italian-inspired pasta dish featuring tender chicken, crispy pancetta, and a rich egg-based sauce, perfect for a comforting dinner.

Ingredients

  • 2 boneless, skinless chicken breasts, diced
  • 8 oz spaghetti or fettuccine pasta
  • 4 oz pancetta or bacon, diced
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water and drain the rest.
  2. In a large skillet, heat olive oil over medium heat and cook pancetta until crispy. Remove pancetta and set aside, leaving the fat in the skillet.
  3. Add diced chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Add garlic during last minute of cooking.
  4. In a bowl, whisk together eggs and Parmesan cheese until combined.
  5. Return pancetta to the skillet, then add drained pasta. Toss to combine all ingredients.
  6. Remove skillet from heat and slowly add egg and cheese mixture, tossing quickly to create a creamy sauce without scrambling the eggs. Add reserved pasta water as needed to loosen sauce.
  7. Season with salt and pepper to taste, garnish with chopped parsley if desired, and serve immediately.

Notes

For a richer flavor, use guanciale instead of pancetta, and serve with extra grated Parmesan on top.
