This comforting Chicken and Spinach Casserole combines tender chicken with nutritious spinach in a creamy, cheesy sauce, perfect for an easy weeknight dinner.

  • 2 cups cooked chicken, shredded
  • 3 cups fresh spinach, chopped
  • 1 cup cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until soft and fragrant.
  3. In a large bowl, combine cooked chicken, chopped spinach, sautéed onion and garlic, cream cheese, sour cream, mayonnaise, salt, pepper, paprika, and half of the cheddar cheese. Mix well.
  4. Transfer mixture to a greased 9×13-inch baking dish and spread evenly.
  5. Sprinkle remaining cheddar cheese and Parmesan cheese on top. Optionally, add breadcrumbs for a crunchy topping.
  6. Bake uncovered for 25–30 minutes or until cheese is bubbly and golden brown.
  7. Let rest for 5 minutes before serving. Enjoy warm.

Notes

For an extra crispy topping, broil the casserole for 2-3 minutes at the end of baking. Serve with a side of crusty bread or a fresh green salad.
