  • 2 cups cooked chicken breast, shredded
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1/2 cup onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried parsley
  • 1/2 tsp dried thyme
  • 1 bay leaf

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
  2. Add garlic and cook for another 1 minute until fragrant.
  3. Pour in the chicken broth and add the bay leaf, dried parsley, thyme, salt, and pepper. Bring to a boil.
  4. Add egg noodles and cook until tender, about 7-8 minutes.
  5. Stir in the shredded cooked chicken and simmer for 5 minutes to heat through.
  6. Remove bay leaf before serving. Adjust seasoning as needed.
  7. Ladle soup into bowls and enjoy warm.

Notes

For added richness, stir in a splash of heavy cream before serving or garnish with freshly chopped parsley for extra color and flavor.
