Cheddar Zucchini Bread

This savory Cheddar Zucchini Bread is incredibly moist, packed with flavor, and a fantastic way to enjoy garden-fresh zucchini. It’s perfect as a hearty snack, a side dish, or even a light breakfast.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 2 cups grated zucchini, squeezed of excess moisture
  • 1 1/2 cups shredded sharp cheddar cheese, plus more for topping
  • 2 large eggs
  • 1/2 cup vegetable oil or melted unsalted butter
  • 1/4 cup milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder (if using).
  3. In a separate medium bowl, whisk together the eggs, vegetable oil (or melted butter), and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir with a spoon or spatula until just combined. Be careful not to overmix.
  5. Gently fold in the grated zucchini and 1 1/2 cups of shredded cheddar cheese until evenly distributed.
  6. Pour the batter into the prepared loaf pan and spread evenly. Sprinkle the remaining shredded cheddar cheese over the top of the loaf.
  7. Bake for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center comes out clean.
  8. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely before slicing.

Notes

Serve slices warm with a dollop of sour cream or a side of chili for a comforting meal. For an extra kick, you can add a pinch of red pepper flakes to the batter.
