Carrot Ginger Soup

A warming and vibrant carrot ginger soup that blends sweet carrots with zesty ginger for a nutritious, comforting meal perfect any time of year.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 pounds carrots, peeled and chopped
  • 1 tablespoon fresh ginger, grated
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in grated ginger and minced garlic, cooking for 1-2 minutes until fragrant.
  4. Add chopped carrots and vegetable broth, bring to a boil.
  5. Reduce heat and simmer until carrots are tender, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  7. Stir in coconut milk and season with salt and pepper.
  8. Heat through for another 5 minutes, but do not boil.
  9. Serve hot, garnished with fresh cilantro if desired.

Notes

For extra creaminess, add a splash of heavy cream or a dollop of Greek yogurt before serving.
