Caramel Apple Cookies

Freshly Baked Caramel Apple Cookies

These Caramel Apple Cookies are soft, chewy, and packed with chunks of sweet apple and gooey caramel. A perfect fall treat that combines the best of apple pie and caramel candies in cookie form!

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 medium apple, peeled and diced
  • 1/2 cup caramel bits or chopped caramels

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the diced apple and caramel bits.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For an extra touch, drizzle melted caramel over the cooled cookies.
