Butter Chicken Skillet is a rich and creamy Indian-inspired dish featuring tender chicken simmered in a spiced tomato butter sauce, perfect for a comforting weeknight dinner.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tbsp butter
  • 1 tbsp vegetable oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp chili powder
  • 1/2 tsp ground coriander
  • 1 (14 oz) can tomato sauce
  • 1/2 cup heavy cream
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat vegetable oil and 1 tbsp butter in a large skillet over medium heat.
  2. Add chopped onions and cook until soft and translucent, about 5 minutes.
  3. Stir in minced garlic and grated ginger, cooking for 1 minute until fragrant.
  4. Add garam masala, cumin, turmeric, chili powder, and coriander; cook spices for 1-2 minutes stirring constantly.
  5. Add chicken pieces to the skillet and cook until lightly browned, about 5-7 minutes.
  6. Pour in tomato sauce, stir to coat the chicken, and simmer for 10 minutes until chicken is cooked through.
  7. Stir in heavy cream and remaining 1 tbsp butter; cook for another 3-5 minutes until sauce is creamy and heated through.
  8. Season with salt to taste and garnish with chopped cilantro before serving.

Notes

Serve this Butter Chicken Skillet with basmati rice or warm naan bread for a complete meal. You can also add a splash of lemon juice for a fresh tangy finish.
