Apple Walnut Chicken Salad

A refreshing Apple Walnut Chicken Salad combining tender chicken, crisp apples, and crunchy walnuts in a light, creamy dressing. Perfect for a healthy lunch or a light dinner.

  • 2 cups cooked chicken breast, shredded or diced
  • 1 cup apples, diced (preferably Granny Smith or Honeycrisp)
  • 1/2 cup walnuts, toasted and chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup Greek yogurt or mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • Optional: 1/4 cup raisins or dried cranberries

Instructions

  1. In a large bowl, combine the cooked chicken, diced apples, toasted walnuts, and chopped celery.
  2. In a small bowl, whisk together Greek yogurt (or mayonnaise), lemon juice, honey, salt, and pepper until smooth.
  3. Pour the dressing over the chicken mixture and gently toss until everything is well coated.
  4. Optional: Stir in raisins or dried cranberries for added sweetness.
  5. Refrigerate the salad for at least 30 minutes before serving to allow flavors to meld.
  6. Serve chilled on a bed of greens, in a sandwich, or with crackers.

Notes

For extra flavor, add a pinch of cinnamon or a splash of apple cider vinegar to the dressing. Toast the walnuts lightly to bring out their nuttiness.
